Our seasoned chef Paul Desmet (aka wookie) grew up in South Africa. With familial roots in Europe and a God Mother who worked under Lenotre in Paris, his appreciation of homestyle European cooking was cultivated from childhood. It was refined as he began a Culinary journey of discovery through Switzerland, Belgium, and London. Paul’s repertoires were extended when the family decided to change environments in 1998 and worked in Singapore followed by a long stint in Borneo, Malaysia.
With decades of international experience between them, Paul and Marion are invested in creating quality food, and quality experiences, with both of equal importance. They forage for the best available ingredients on any given day- small quantities are bought and the mise en place turns over fast. The specials board changes constantly and regular customers know to get in quick to reserve portions. Marion is just as meticulous about creating exceptional customer events, as Paul is about ripening tomatoes properly and presenting the perfect Gnocchi. Fresh flowers are a hallmark of Marion’s dining experience as is the little touch that lets you that your table is special. Together, they are the perfect team ready to offer you an outstanding experience.
